Peru Farmers - Each producer has their own small wet mill, with a depulper and concrete fermentation tank. Ripe cherries are hand picked, pulped and dry fermented overnight for 12-18 hours. the coffee is then washed  and moved to covered drying beds, where it dries for between 10 and 14 days. Once dried, the farmer will deliver their crop to the UNAFECOOP mill in San Ignacio, where the yield is calculated and the farmer receives a partial payment.

Lorenzo and his team cup the coffee and do a full assessment on each delivery, categorise them into quality bands and pricing range. The beans are immediately packed to preserve the quality.

the highest quality bands include this decaf blend from Alex Garcia and Horacio Neyra Vargas - both active members of the Union Y Fe cooperative.

Columbia Farmers - After picking, the coffee is de-pulped on a small machine on the individual farm, before undergoing a dry fermentation for 18-20 hours. After this, the coffee is washed 3 - 4 times before being dried in parabolic tents for between 8-14 days where they move the coffee three times per day to ensure even and consistent drying.

Once the coffee has dried, the coffee is rested for 20 days before delivering to the local collection point. here it is graded and checked, before being cupped and allocated to a quality level.

The farmers that have contributed to this blend are Silvio Lopez and Ricaurte Ortega, who are both smallholder producers, growing coffee on less than 2 hectares of land. Both are members of the Expocosurca cooperative based in Timbio, Cauca.
